That depends on the system and the model you choose. Systems run on your infrastructure; whether inference is local or via a provider is a configuration decision, and each system's page states what it supports. We would rather say that plainly than imply everything is local.
The trust page sets out how releases are gated, how provenance is pinned and how licensing works across classifications, and each system publishes its own gate status. What we will not do is claim a certification we do not hold.
